The Wines
DO Rías Baixas
Martín Códax — 100% Albariño fermented in temperature-controlled stainless steel tanks.
Burgáns —100% Albariño fermented in temperature-controlled stainless steel tanks.
Martín Códax Lías — 100% Albariño fermented in temperature-controlled stainless steel tanks. Aged on its fine lees with bâtonnage for 6–7 months, followed by up to 12 months in tank. After bottling, it rests an additional 6 months before release.
Organistrum — 100% Albariño fermented in Allier French oak barrels followed by 3–4 months of aging in 300–500L barrels. Aged an additional 2–3 months in barrel.
Martín Códax Espumoso —100% Albariño picked 10 days before the standard date. The base wine ages on lees for 3 months before undergoing secondary fermentation in bottle via the traditional method. Aged for 30 months on lees before disgorgement.
Marieta —100% Albariño fermented in stainless steel tanks. Alcoholic fermentation is halted early using cold temperatures, resulting in 14 g/L of residual sugar. A fruit-forward, semi-dry style of Albariño.
DO Ribeiro
Anxo Martín — Treixadura, Albariño, and Godello fermented in stainless steel tanks and aged 6 months on lees with bâtonnage, followed by 6 months in stainless steel before bottling.
DO Monterrei
Mara Martín — 100% Godello fermented in temperature-controlled stainless steel tanks.
Mara Moura — 90% Godello, 10% Treixadura from high-altitude vineyards on schist soils. Fermented at low temperatures with bâtonnage twice weekly.
Terras do Cigarrón — 100% Godello fermented in temperature-controlled stainless steel tanks. Named after the Cigarróns, traditional masked figures of Entroido (Carnival) whose bells and costumes signal celebration across Monterrei.
Terras do Cigarrón Tinto — A blend of Mencía and Merenzao from granite, schist, and sedimentary soils. After destemming, the grapes are cold-soaked and a gentle extraction is prioritized during fermentation. Undergoes malolactic fermentation and is aged in stainless steel.
